Quick and Easy Outback Potato Soup Recipe

A delightful and easy to prepare potato soup inspired by the popular Outback Steakhouse dish, featuring turkey bacon for added flavor.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup turkey bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup green onions, chopped
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté onion and garlic until soft.
  3. Add diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Use a potato masher to mash the potatoes to your desired consistency.
  5. Stir in heavy cream, salt, pepper, and paprika. Let simmer for an additional 5 minutes.
  6. Serve hot, topped with turkey bacon, green onions, and cheddar cheese.

Notes

  • For a healthier version, you can use low-fat cream or milk.
