Saffron Pistachio Basbousa

  • 1 cup semolina flour
  • 1 cup sugar
  • 1 cup yogurt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon saffron threads
  • 1/2 cup pistachios, chopped
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix semolina flour, sugar, yogurt, melted butter, baking powder, and salt until well combined.
  3. Pour the mixture into a greased baking dish and smooth the top.
  4. Sprinkle chopped pistachios and saffron threads over the top.
  5. Bake for about 30-35 minutes or until golden brown.
  6. In a saucepan, combine water and lemon juice; bring to a boil to prepare the syrup.
  7. Pour the syrup over the basbousa while it’s still hot.
  8. Let it cool, then cut into squares and serve.

Notes

  • For a richer flavor, allow the basbousa to soak up the syrup overnight.
  • Garnish with additional pistachios before serving.
