Small Batch Apple Pumpkin Streusel Muffins

  • 1/2 cup pumpkin puree
  • 1/2 cup diced apple
  • 1/3 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar
  • 2 tablespoons oats

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the diced apple.
  6. Divide the batter among the muffin cups.
  7. In a small bowl, mix brown sugar and oats, then sprinkle on top of the muffins.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.

Notes

  • For extra flavor, add nuts or chocolate chips.
