  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and salt together.
  3. In a separate bowl, cream together the butter and powdered sugar until light and fluffy.
  4. Add the egg yolk and extracts to the butter mixture and mix well.
  5. Gradually add the flour mixture and mix until just combined.
  6. Chill the dough for 30 minutes in the refrigerator.
  7. Roll out the chilled dough on a floured surface and cut into desired shapes.
  8. Transfer the cookies to a baking sheet lined with parchment paper and bake for 10-12 minutes.
  9. Let cool, then spread raspberry jam on half of the cookies and sandwich with the other halves.
