- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup raspberry jam
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour and salt together.
- In a separate bowl, cream together the butter and powdered sugar until light and fluffy.
- Add the egg yolk and extracts to the butter mixture and mix well.
- Gradually add the flour mixture and mix until just combined.
- Chill the dough for 30 minutes in the refrigerator.
- Roll out the chilled dough on a floured surface and cut into desired shapes.
- Transfer the cookies to a baking sheet lined with parchment paper and bake for 10-12 minutes.
- Let cool, then spread raspberry jam on half of the cookies and sandwich with the other halves.
