- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup milk
- 1 1/2 cups fresh cherries, pitted and halved
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon cinnamon
- 2 tablespoons cold butter
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix melted butter, eggs, vanilla, and milk until combined.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in cherries.
- In a separate bowl, prepare the streusel by mixing brown sugar, flour, and cinnamon. Cut in cold butter until crumbly.
- Divide muffin batter among the lined muffin cups and sprinkle streusel on top.
- Bake for 20-25 minutes or until a toothpick comes out clean.
