Spicy chicken and chorizo rice

  • 2 cups rice
  • 1 pound spicy chicken fillets
  • 1 cup chorizo, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add chorizo and cook until browned.
  4. Stir in the spicy chicken fillets and cook until browned on all sides.
  5. Add rice, paprika, cayenne, and stir to coat.
  6. Pour in chicken broth, bring to a boil.
  7. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  8. Fluff the rice with a fork, garnish with parsley, and serve.
