Stuffed Butternut Squash with Spinach, Bacon, and Cheese

A delicious and easy recipe for stuffed butternut squash filled with spinach, turkey bacon, and cheese.

Ingredients

  • 1 butternut squash
  • 2 cups fresh spinach
  • 4 strips turkey bacon
  • 1 cup shredded cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half and scoop out the seeds.
  3. Drizzle olive oil and sprinkle salt and pepper on the squash.
  4. Place the squash on a baking sheet and bake for 30-40 minutes until tender.
  5. Meanwhile, cook the turkey bacon until crispy, then chop it.
  6. In a skillet, sauté the spinach until wilted.
  7. In a bowl, mix the bacon, spinach, and cheese.
  8. Once the squash is done, fill it with the bacon and spinach mixture.
  9. Return to the oven for an additional 10 minutes to melt the cheese.

Notes

  • This dish can be made ahead of time and reheated.
  • Feel free to substitute with other types of cheese.
