Sun-Dried Tomato Pasta Recipe

A delicious and easy recipe combining sun-dried tomatoes and turkey bacon for a comforting meal.

Ingredients

  • 8 ounces pasta of choice
  • 4 ounces sun-dried tomatoes, chopped
  • 6 slices turkey bacon, diced
  • 2 cups spinach, fresh
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a skillet, cook turkey bacon over medium heat until crispy. Remove and drain on paper towels.
  3. Add garlic and sun-dried tomatoes to the skillet, sauté for 2 minutes.
  4. Pour in heavy cream, bringing to a simmer. Stir in Parmesan cheese until melted.
  5. Add cooked pasta and spinach, tossing until combined. Season with salt and pepper.
  6. Top with crispy bacon and serve.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Can add red pepper flakes for some heat.
