- 2 cups pumpkin puree
- 1 cup heavy cream
- 1 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon bourbon
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin puree, heavy cream, brown sugar, eggs, vanilla extract, bourbon, spices, and salt. Mix until smooth.
- Pour the mixture into ramekins and place them in a baking dish.
- Fill the baking dish with hot water halfway up the sides of the ramekins.
- Bake for 30-35 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours.
- Before serving, sprinkle a thin layer of sugar on top and use a torch to caramelize until golden brown.
