Thai Coconut Shrimp Curry

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon sugar
  • 1 tablespoon fish sauce
  • 1 cup bell peppers, sliced
  • 1 tablespoon lime juice
  • 1/4 cup chopped cilantro

Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the onion, garlic, and ginger; sauté until fragrant.
  3. Stir in the red curry paste and cook for a couple more minutes.
  4. Pour in the coconut milk, sugar, and fish sauce; bring to a simmer.
  5. Add the shrimp and bell peppers; cook until shrimp are pink and cooked through.
  6. Remove from heat; stir in lime juice and cilantro.
  7. Serve hot over rice or noodles.

Notes

  • Adjust the level of spiciness by adding more or less curry paste.
  • For a vegetarian option, substitute shrimp with tofu or vegetables.
