Thai Red Curry Ramen with Coconut Milk and Cilantro

  • 2 cups ramen noodles
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 cup bean sprouts
  • 1 red bell pepper, sliced
  • 1 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, minced

Instructions

  1. In a large pot, combine the vegetable broth and red curry paste.
  2. Bring to a boil, then add the coconut milk and stir well.
  3. Add the ramen noodles and cook according to package instructions.
  4. In the last few minutes of cooking, add the red bell pepper and bean sprouts.
  5. Remove from heat and stir in lime juice, soy sauce, and ginger.
  6. Serve hot, garnished with fresh cilantro.
