Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 cups spinach, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped turkey bacon and cook until crispy.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the carrots, celery, and cannellini beans. Season with thyme and black pepper.
  5. Simmer for 20 minutes until the vegetables are tender.
  6. Stir in the spinach and cook until wilted.
