The Ultimate Tiramisù Cupcakes

  • 1 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons coffee liqueur

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix together the flour, baking powder, cocoa powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually mix in the dry ingredients, followed by the brewed coffee until just combined.
  6. Pour the batter into the prepared cupcake liners, filling them 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  8. In a separate bowl, whisk together the mascarpone, heavy cream, powdered sugar, and coffee liqueur until soft peaks form.
  9. Frost the cooled cupcakes with the mascarpone mixture.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
  • These cupcakes can be refrigerated for a firmer frosting.
