Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture.
  5. Roll dough into small balls and place on ungreased cookie sheets.
  6. Make an indentation in the center of each ball with your thumb.
  7. Fill each indentation with fruit preserves.
  8. Bake for 12-15 minutes, or until edges are lightly golden.
  9. Let cookies cool on the pan for a few minutes before transferring to wire racks.
