  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup espresso or strong coffee, cooled
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 2 tablespoons coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  6. Stir in the cooled espresso and mix until smooth.
  7. In a separate bowl, mix the mascarpone cheese, powdered sugar, and coffee liqueur until creamy.
  8. Drop spoonfuls of cookie dough onto the prepared baking sheet and create an indentation in the center.
  9. Fill the indentation with the mascarpone mixture.
  10. Bake for 10-12 minutes or until cookies are set but still soft.
  11. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra touch, sprinkle with cocoa powder before serving.
  • These cookies are best enjoyed within a few days of baking.
