  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 1/3 cup brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 tablespoons cocoa powder
  • 1/4 cup coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, cream the softened butter and sugar together until fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla and espresso.
  4. In another bowl, combine the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fill the cupcake liners 2/3 full with the batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely.
  9. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese and coffee liqueur.
  10. Frost the cooled cupcakes generously with the mascarpone cream.
  11. Dust with cocoa powder before serving.

Notes

  • For a richer flavor, soak the cupcakes in coffee liqueur before frosting.
