- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1/3 cup brewed espresso, cooled
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 2 tablespoons cocoa powder
- 1/4 cup coffee liqueur (optional)
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a bowl, cream the softened butter and sugar together until fluffy.
- Beat in the eggs one at a time, then mix in the vanilla and espresso.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill the cupcake liners 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese and coffee liqueur.
- Frost the cooled cupcakes generously with the mascarpone cream.
- Dust with cocoa powder before serving.
