  • 4 small pumpkins
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the pumpkins and scoop out the seeds.
  3. In a skillet, cook the ground turkey over medium heat until browned.
  4. Add the onion and garlic, cooking until softened.
  5. Stir in the cooked quinoa, sage, salt, and pepper.
  6. Remove from heat and mix in the cheddar cheese and parsley.
  7. Stuff the mixture into the prepared pumpkins.
  8. Place the pumpkins in a baking dish and cover with foil.
