- 1 cup graham cracker crumbs
- 2 tablespoons sugar
- 5 tablespoons unsalted butter, melted
- 1 package (8 oz) cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla bean paste
- 1/2 cup heavy cream
- 2 tablespoons sugar for topping
- Preheat the oven to 325°F (160°C) and line a cupcake pan with liners.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of each cupcake liner.
- In a mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in the vanilla bean paste.
- Pour the cheesecake batter over the crust in each cupcake liner.
- Bake for 20-25 minutes or until set. Let cool completely.
- Refrigerate for at least 2 hours before topping.
- Before serving, beat heavy cream to soft peaks and spoon over the cheesecake cupcakes.
- Sprinkle with sugar and use a kitchen torch to caramelize the sugar.
