Vanilla Bean Crème Brûlée Cheesecake Cupcakes

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 5 tablespoons unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste
  • 1/2 cup heavy cream
  • 2 tablespoons sugar for topping

Instructions

  1. Preheat the oven to 325°F (160°C) and line a cupcake pan with liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of each cupcake liner.
  3. In a mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla bean paste.
  5. Pour the cheesecake batter over the crust in each cupcake liner.
  6. Bake for 20-25 minutes or until set. Let cool completely.
  7. Refrigerate for at least 2 hours before topping.
  8. Before serving, beat heavy cream to soft peaks and spoon over the cheesecake cupcakes.
  9. Sprinkle with sugar and use a kitchen torch to caramelize the sugar.
