- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 tablespoon active dry yeast
- 3/4 cup almond milk
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 2 teaspoons ground cinnamon
- 1/2 cup powdered sugar
- 2 tablespoons vegan cream cheese
- 2 tablespoons beet juice
- In a bowl, combine flour, sugar, salt, and yeast.
- In another bowl, mix warm almond milk, coconut oil, and vanilla extract.
- Combine wet and dry ingredients to form a dough.
- Knead the dough until smooth, then let it rise for 1 hour.
- Roll out the dough and spread with melted coconut oil and cinnamon.
- Roll up the dough tightly and slice into rolls.
- Place rolls in a baking dish and let them rise again for 30 minutes.
- Bake at 350°F (175°C) for 25-30 minutes.
- Mix powdered sugar, vegan cream cheese, and beet juice for icing.
- Drizzle icing over warm cinnamon rolls before serving.
