  • 1/2 cup cream cheese
  • 1/4 cup olive oil
  • 1 teaspoon lemon juice
  • 2 cups assorted roasted vegetables (like bell peppers, zucchini, and eggplant)
  • 1 tablespoon fresh herbs (like parsley or dill)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables and toss them with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast the vegetables for 20-25 minutes or until softened and caramelized.
  4. In a food processor, blend the feta cheese, cream cheese, olive oil, and lemon juice until smooth.
  5. Transfer the whipped feta to a serving bowl and top with the roasted vegetables and fresh herbs.
  6. Serve with pita chips or fresh vegetables.
