A delicious Zuppa Toscana recipe featuring turkey bacon for a healthier twist on a classic Italian soup.

  • 6 cups chicken broth
  • 1 pound turkey bacon
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 3 large potatoes, diced
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in kale, heavy cream, and Italian seasoning. Let simmer for another 5 minutes.
  5. Chop the turkey bacon and stir it back into the soup. Season with salt and pepper to taste, then serve hot.

Notes

  • This soup can be made ahead of time and reheats well.
  • For a spicier version, add crushed red pepper flakes.
